A washed rind cheese from Virginia. Reminiscent, both in appearance, flavor patterns and smell, of an Italian Taleggio. The cheese makers at Meadow Creek farm age the cheese longer though, which makes for an even richer, beefier and nuttier flavor pattern.
The cheese benefits from letting it get to room temperature as it becomes really gooey then and its flavor becomes really complex and the grassy, earthy overtones come to the fore.
Serve this cheese with crusty bread and dried fruits.
