This is a beautiful little cheese with a dusty mold that gives the cheese a musky scent. Its paste is smooth with very clear grass and herb overtones. The cheese is a typical young Italian mountain cheese (aged between 1 and 3 months). As we like our Riccio to be aged a little longer so that it has a little bit more to say for itself, our Riccio is closer to 3 months in age.
The cheese is aged underground which helps produce the mold on the rind.
The best way to enjoy this cheese is in combination with some nice prosciutto or Italian salami and a glass of wine.
