Rogue Creamery Smokey Blue

This is reputedly the first blue made on the West coast and to make it more complicated the cheesemakers at Rogue (yes, they also have a brewery) cold smoke the cheese over hazelnut shells from the Pacific North-West for 16 hours. The result is a strong and creamy blue cheese toned down by woody and earthy flavors resulting from the smoking.
Cave-aged for around six months the cheese is very spreadable and really benefits from 20 minutes at room temperature.
Serving suggestion: on a cracker or in a salad
