This is a young Gouda that is produced in 6 pound logs and then smoked over hickory. The creamy interior has a very definite smoky flavor. The cheese is slightly sweet because of the fact that the curds are washed which removes some of the lactic acid.

The cheese is a favorite amongst mac and cheese aficionados and deserves a place on your cheese tray. The smoked rind is edible.
