Ubriaco (Drunkard) cheese hails from Veneto, a region in Italy where cheese makers have traditionally dunked their products in the remnants of the wine production (must) in order to preserve the cheese longer. Although they preferred to rub their cheeses with olive oil, whenever this became an uneconomical choice, they would turn to the wine must of their wine making friends.
The Prosecco wine must gives the cheese a decidedly winy aroma and certainly contributes to a more complex flavor pattern. The cheese is aged for 6 months during which time it intensifies in flavor and becomes more crumbly.
