Whitney is the newest addition to Jasper Hill’s mountain-style family of cheeses. Named after the Whitney family whose members have been instrumental to Jasper Hill's success, the cheese is made in the Jura style of mountain cheeses (this even includes reclaimed copper vats from that region). 

Just like its European counterparts, the cheese is aromatic (because of the wine-wash), pliable, nutty, somewhat meaty, silky smooth and melts like a dream. If you are looking for a Raclette alternative this might just be your cheese. 

As a snacking cheese you can combine it with all kinds of charcuterie and fresh fruits.
