run dairy farm. Their herd is Jersey or cross
bred jersey that they have been selecting for
A2 type milk for many years. The cow's diet
is organic grass, grass hay or grass hay lage.
The herd is free from any antibiotics and the
farm is GMO free.
Johnny’s Clothbound Cheddar is made in
the traditional English cheddar way. The
curds are wrapped in cheesecloth, hooped,
put in the press, larded and then aged in
caves .
Very flavorful with notes of sweetness, a traditional cheddar sourness, and a slight bite from the raw milk.
