This is reputedly the first blue made on the West coast and to make it more complicated the cheesemakers at Rogue cold smoke the cheese over hazelnut shells from the Pacific North-West for 16 hours. The result is a strong and creamy blue cheese toned down by woody and earthy flavors resulting from the smoking.

Cave-aged for around six months the cheese is very spreadable and really benefits from 20 minutes at room temperature.

 Serving suggestion: on a cracker or in a salad
