This traditional English-style cheddar from Valley Shepherd Creamery in New Jersey is made with raw Jersey cow's milk in a 20 lb traditional truckle shape. Being an old-fashioned clothbound cheddar means that it  spends a minimum of 1 year aging in a cave. Aromatic and sharp, it’s deeply satisfying flavor is achieved via traditional cheddaring methods.
