Aged 5 months . A Basque style cheese coated with a layer of herbs de Provence that gives an irresistible aroma. This cheese is made at Valley Shepherd in Long Valley New Jersey in small batches. Reminiscent of Ossau Iraty cheese and other cheeses from the Pyrenees mountains of France. This Cheese is very aromatic with hints of tarragon, thyme and other herbs.
