Made in the homeland of Cheddar, the county of Somerset in Southwest England, Westcombe Cheddar is made in the traditional Olde-Worldy style in the shape of a truckle (cylinder) covered in cheesecloth and lard. Made with raw milk so that it can fully express the sense of terroir, the cheese is nutty, meaty and tangy. It is aged for 12-18 months in the cave dug in the hillside at the farm. Just like the people from Somerset, the cheese is not in a rush. Let the cheese linger and you will be rewarded.
