Mahon cheese hails from the island of Menorca and is named after the harbor town all cheeses produced on the island go through when exported to mainland Spain or, more predominantly, Italy. In fact, all cheeses produced on the island are called Mahon. As such they have a wide variety of flavors and aging.
Mahon La Payesa is aged in caves underground for 6 months and in the process has its rind rubbed with olive oil and paprika.
The resulting cheese is intense in flavor, flakey and salty with a slight acidic undertone.
