Our sister-cheese to the Red Dragon is also made at Abergavenny Cheese, however instead of mustard they have incorporated chives and shallots in this cheese. It is named after Tintern Abbey not so much because of the poem by William Wordsworth, but more because that was were shallots used to be grown in Wales. The base is still a smooth, creamy cheddar with the chives and shallots giving it a nice balanced tang. Just like the Red Dragon it is an extremely good melter, so it works great in a grilled sandwich. Ask us to make one for you with bacon and our caramelized onions.
