Midnight Moon is made exclusively for Cypress Grove. Mary Keehn, the former owner of Cypress Grove, worked closely with a Dutch cheese maker to set the recipe for this cheese.

When we get this cheese it is over 1 year old and has had time to develop its full flavor pattern. The beautiful ivory colored paste under the dark blue waxed rind is home to butterscotchy undertones to the goat tang and brings a lingering caramel finish. Just like its cow compatriots of the same age, Midnight Moon develops a nice tyrosine crunch.

The cheese won the Gold award at World Cheese Awards 2014.
