Emmentaler derives its characteristic big “eyes” or holes from an inconsistent pressing which allows CO2 gas to remain in the cheese. It derives its name from the fact that it is made in the valley (tal) of the river Emm in the Bern canton in Switzerland.

The cheese has a cooked and pressed paste and is made in wheels of more than 150 lbs. The cheese typically ages 4-6 weeks although more mature and sharper versions exist too.

Characteristic for the cheese are a mildness in flavor, low salt content and a sweet aftertaste. It is a great melting cheese.
