The Flory family of Jamesport Missouri to makes this cheese in the tradition of the English Cheddar truckle. The cylindrical shape is a tell-tale sign for the cheese buyer. The cheese monger may opt to remove the cheese cloth that the cheese was bandaged in during the aging process (it was smeared with lard too to prevent the cheese from drying out and to get some good bacterial activity on the outside of the cheese to form a nice natural rind).

The cheese is aged in the cloth for a year and develops rich grassy notes with butterscotch and a fruity aftertaste.

Have this cheese with some fruit preserves.
